How many times have you prepared a recipe that includes tomatoes among the ingredients? Probably a hundred times. And is that this fruit is so popular in world gastronomy, you will hardly stop finding it in the recipes.
The tomato is not new to the gastronomy, in fact, it’s estimated that already 500 years before Christ was cultivated in Mexico and used in the preparation of dishes. Then with the Spanish conquest of America, the tomato traveled to the old continent, and the rest is history.
Today it’s a protagonist in world cuisine, so much that we cannot imagine a good Italian pasta without its respective tomato sauce to give it the taste, a French ratatouille without that characteristic tomato flavor, or Mediterranean cuisine without this fruit.
The tomato is incredibly versatile in the kitchen, it can be used fresh, processed and dehydrated to incorporate flavor into the dishes. We can consume it in salads, juices, sauces, jams, among others.
Further, it may be from a flavor catalyst or the dish itself.
Nutritionally it’s wonderful, as it’s a low calorie fruit with high water content. It’s rich in carbohydrates and vitamin C, carotene and antioxidants.
In the kitchen there are many recipes where you get it as an ingredient, but certainly there are some in which shines as the protagonist. One of them is pomodoro sauce or the classic tomato sauce, which is the star in Italian cuisine.
This sauce is prepared essentially from tomato paste, seasoned with garlic, onion and salt. Depending on the country where it’s prepared, you can add more ingredients to the mixture to enhance flavors, such as in Mexico where red peppers are added or in Spain and Italy where they add basil and olive oil.
Another dish where the tomato stands out, are the sofritos, there, along with the onion and the garlic, they make the perfect combination to season stews.
Raw, it can shine also in the kitchen. It can be used in innumerable ways, accompanying it with spices such as oregano, thyme, basil and olive oil, is a guaranteed flavor explosion.
Similarly, in its raw state can be used for a delicious and refreshing gazpacho. You can also use the fresh juice in the cocktail bar, where it shines as the main ingredient of the famous Bloody Mary drink.
